When flatbreads arrive in our Earth & Wheat Variety Bread Box, we know it's falafel time 🤤
What's your favourite flatbread topping? 🥙
Ingredients
2 cups chickpeas (soaked overnight)
1/2 tsp baking soda
large handful fresh parsley
Large handful fresh coriander
1 small onion
7–8 garlic cloves, peeled
Salt to taste
1 tbsp each black pepper, cumin seeds, and ground coriander
1 tsp baking powder
Oil for frying
Preparation
1. Add the chickpeas, onions, garlic, herbs and spices to a blender. Run in 30 second blasts until a falafel mixture forms
2. Transfer the falafel mixture to a container and cover tightly. Refrigerate for at least 1 hour or (ideally overnight) until ready to cook.
3. Just before frying, add the baking powder to the falafel mixture and stir with a spoon
4. Scoop tablespoonfuls of the falafel mixture and form into 2-3cm-wide balls
5. Fill a medium saucepan 3 inches up with oil. Heat the oil on medium-high until it gently bubbles. Carefully drop the falafels in the oil, fry for about 3 to 5 minutes until crispy and golden
5. Place the fried falafel in a plate lined with kitchen roll so the excess oil can drain off
6. Serve falafel on Earth & Wheat flatbread with some hummus and veggies!
