Muffaletta/Picnic Sandwich

About the Recipe


3 Earth & Wheat Focaccia

1 tbsp basil pesto

2 slices of ham

2 slices of Swiss cheese

Handful of roasted red pepper, sliced

½ red onion, thinly sliced

6-8 slices of salami

2 slices of mozzarella

2 slices of artichoke hearts

1 tbsp green olives, sliced

1 tbsp celery, sliced

Handful of basil leaves

Handful of salad

Salt and pepper to season


1.      Start building your picnic sandwich with a layer of pesto spread on the base then ham and Swiss cheese.

2.      Cover with a slice of focaccia followed by a layer of red onions and peppers covered with salami.

3.      Next layer up more bread and add artichokes, mozzarella, and basil.

4.      Finish with a final layer of olives, salad and sliced celery.

5.      Wrap the sandwich with baking parchment or cling film and press under a heavy cast iron pan in the fridge for 1 hour.

6.      Take on your picnic and serve thin slices to friends and family.
